Celiac Disease Awareness--Gluten Free, Not a Choice, A Cure

Yesterday was Celiac Disease Awareness Day. In true me fashion lately, I'm a day behind. But I thought I would take the opportunity to share how Celiac Disease impacts our family and spread a little awareness.

My third child, JT, has Celiac disease. 

He was diagnosed when he was 3 1/2, a few months after Wade was born. JT had never been a big eater, he always preferred drinking a bottle over baby food and a sippy cup over lunch. He would get bad stomachaches and get sick to his stomach a lot.  But I had no idea what Celiac was. Being "gluten free" hadn't gone mainstream yet so I wasn't familiar with that either.  After he had hernia surgery, JT started losing weight and was sick all the time. He was slipping off the growth charts and was what doctors call "failing to thrive."  He couldn't digest any food. He looked like a starving child.

Once we got the diagnosis, everything changed. We got rid of the gluten in our house and in most of our life and JT started getting better. He gained weight. He grew. He got happier. He got healthier.

Going gluten free wasn't a choice, it was a cure.

Here are a few of our truths about what Celiac disease was and is for us....

Celiac disease was watching my 3-year-old waste away.
He could not keep any food down. His arms were like toothpicks. His belly was distended and hard as a rock and hollow sounding. He was pail and sickly. But he still smiled because he is JT, such a positive, sweet boy.

Celiac disease is a part of our everyday life. We read labels. We research online. We are very careful. Even a crumb can make JT sick. Our household is gluten free because JT gets sick from cross contamination and we want him to always feel comfortable and included at home.
We shop at all kinds of grocery stores and are reaping the benefits of everyone wanting to go gluten free. There are so many more products available at more affordable prices than there were seven years ago!!!!!

And duh, we still eat cake. Gluten free cake! 

When we travel, we don't think that much about restaurants. We have dinner in our room or on a picnic with the gluten free food we buy/bring. It's actually pretty awesome--we end up saving a lot of money and spending more time relaxing together. This was our spread in our tiny hotel in Atlanta this past summer.
Sadly, we miss stuff and mess up and he gets sick sometimes. One time we thought it was a gluten-free muffin mix and it was not and JT got violently ill. 

Celiac disease does not cause anaphylactic shock. Having to be so careful so JT does not get sick and stays healthy and strong has made my compassion sort of explode for other children and families dealing with any food allergy or autoimmune disease. I cannot imagine worrying about whether or not my child would stop breathing. So when a parent asks me to not bring peanuts to school, I don't and it's not a problem at all.

Celiac disease is not an allergy, it is an autoimmune disease. When JT gets "glutened" he usually throws up a lot and has severe stomach pain. He also gets very dazed and foggy-headed. He becomes very tired and can be in bed for at the very least 24 hours after ingesting the gluten. 

Celiac disease is our normal. It doesn't slow down JT for very long. He is an active, happy, pretty freakin' fantastic kid.

Celiac disease is a serious genetic autoimmune disease.

Celiac disease is the only autoimmune disease with a known trigger--Gluten. Gluten is the protein found in wheat, rye and barley and foods and drinks that contain these grains.

Left undiagnosed and untreated, people with Celiac disease are at-risk for other serious health consequences such as osteoporosis, anemia, thyroid disease and even certain cancers.

Eighty-nine percent of patients experience brain fog after gluten exposure. Some describe it as difficulty concentrating and forgetfulness and grogginess.

One Mighty Basil Plant, DIY Pesto & Pinterest Poser Challenge

I've always wanted to be one of those people that could say "I made this from my garden." Problem is, I wasn't blessed with much of a green thumb or the patience to garden.  But I still have daydreams of huge, lush gardens in my backyard like my grandpa had.  Or even a small container garden full of tomatoes that produce many that I start canning and giving them to friends and neighbors. 

Over the years I've tried, and failed. BUT this year I have one plant that I bought at a farmer's market, a basil plant.  It just won't quit on me, even when I forget to water it or I pull off too many leaves to make a tomato basil salad.


Yeah that's right I'm making things from my garden...my garden of one mighty basil plant in a pot.  

I'm making salads and and putting basil on my pizza and in pasta dishes and EVEN MAKING MY OWN PESTO! Whaaaaat? Yeah, my own pesto. Today's Pinterest Poser Challenge* is DIY Pesto. Check it.

*In an attempt at not being a Pinterest Poser,** every week-ish I detail a new project/idea/recipe inspired by Pinterest.
**My definition of a Pinterest Poser is someone who is all pins and no substance.


Based on this pin on Pinterest from Gimme Some Oven, I made my own pesto and THEN made a pesto pasta that the whole family loved.

For the Pesto, here's what you need and what you do:

Ingredients
  • 1/2 cup pine nuts
  • 3-4 cloves garlic 
  • 3 cups fresh basil leaves, packed
  • 1/2 cup freshly grated Parmesan ( I used Kraft, nothing too fancy here)
  • 1/2 cup extra-virgin olive oil
  • salt and freshly ground black pepper to taste

  • In a food processor or blender, blend together basil, nuts, garlic, and cheese. Pour in oil and then add in salt and pepper. Remember to scrape down the sides in between blending to make sure it's well-blended.


It seriously only took me about seven minutes!  

Then for dinner, I cooked up some gluten free spaghetti noodles and boiled some chicken breast and tossed it all together with the fresh pesto.  Boosh! Dinner!

Totally gluten free and delicious.





I think what this post is all about is not giving up on your dreams.  Sure my garden is just one mighty basil plant in a pot, but I just made part of my dinner with it and now I'm bragging about it on the Internet just like I dreamed when I was a little kid. Who knows? Maybe next year I will have two plants or three!

Gluten Free Soft Pretzels Just Like Target, Sort Of & Pinterest Poser Challenge

We used to go to Target a lot.  Everytime we went, I got the kids a soft pretzel.  It was sort of our thing, a special little treat.  When JT was diagnosed with Celiac disease we stopped getting soft pretzels at Target. 

Not being able to have soft pretzels at Target isn't the biggest deal in the world.  Believe me, I know that!  But it is just one more little way that JT feels different.  JT was diagnosed with Celiac disease when he was four years old, he is almost forgetting what the Target pretzels taste like anyway.  There are a lot more gluten free options available (for a lot of extra money still), but being a kid with Celiac makes you different at birthday parties, at the holidays, after the game, anytime anyone says "let's get pizza."  Our society is built around food (and alcohol for adults) and when you can't eat it you are different, left out, special.  

JT never complains, ever.  He gets quiet sometimes. He gets super excited when he can have the snack after the game.  So I am super grateful for things like Pinterest.  Not because I can try to make perfect looking crafts or elaborate birthday cakes (although I do like to attempt those).  I like Pinterest for the million and fifty gluten free food ideas and inspiration.

I recently saw the most beautiful picture of a soft pretzel on Pinterest and it said "gluten free."  What?! I decided I would give my boy soft pretzels just like Target for a special treat.  That is this week's Pinterest Poser Challenge*-- Gluten Free Soft Pretzels.

The recipe (click here for the full recipe) came from a blog that seemed a lot cooler than I feel which both intimidated me and made me feel sort of a tiny bit cooler for even reading it.  The recipe called for Coconut Oil. I've never bought Coconut Oil, but had recently heard about all the amazing things it can do for a person on Dr. Oz.  The good doctor claims putting it in your coffee can clear a foggy head. So I happily went to the grocery store to buy that for my foggy head and my pretzels.  Um, did you know Coconut Oil is hard? And expensive.  Seven dollars on a not huge bottle.  

Here's the ingredient/shopping list for the GF pretzels:
Gluten free flour
Active Dry Yeast
Fine Sea Salt
Sugar
Eggs
Honey
Coconut Oil
Butter
Baking Soda

Here's part of the fancy recipe:
 1 1/3 cup all-purpose gluten-free flour (I always use Betty Crocker gf flour blend)
2 1/4 teaspoons active dry yeast
1/2 tsp fine sea salt
1 tsp sugar (the original recipe called for coconut sugar, but I used regular)
1/2 cup warm water
1 egg
1 Tbs honey
Coconut oil
Melted butter
Coarse sea salt (for dusting)

For baking soda bath:
large pot
2 1/2 quarts water
2/3 cups baking soda

Additional tools:
Cookie sheet
Parchment paper
Pastry brush
Large bowl


A few things that I did differently than the fancy recipe/website:

The original recipe called for a mixer, which I do not have so I just stirred everything by hand.  

The original recipe says you should use a hand-held pasta strainer for the soda bath, I do not have one so I just used a large slotted spoon.

Lucy and I wore headbands and pretended we were sisters working in a bakery in Russia in the 1800s, because we like to play make-believe whenever we can.  Except Lucy wouldn't let me use an accent, waaaa.


Here's my Pinterest Poser takeaway:

  • They really didn't taste anything like Target soft pretzels.  BUT they looked a little bit like them.  They were denser than soft, puffy gluten-filled pretzels.  Most gluten free baked goods are more dense.
  • These were fun to make.  It was a lengthy process, but fun do to with the kids.  
  • I've been putting coconut oil in my coffee everyday and I think I might be a little less foggy, maybe? 
  • JT didn't like them.  But I think he dug that I tried.  And I will not stop doing little things that make him feel good and not so left out of all things food.
  • Not a total win, but not a total fail either.  I will make them again for sure.  
  • I am no poser.
