Gluten Free Pop Tarts (Pinterest Poser Challenge)

This week's Pinterest Poser Challenge** isn't about crafts or outfits or expressing myself.  No this week it's about something I'm even worse at than crafting, baking.

**In an attempt at not being a Pinterest Poser,* every week I  detail a new Pinterest challenge whether it be a new recipe or a craft.   
*My definition of a Pinterest Poser is someone who is all pins and no substance.


We are a gluten free (gf) household.  Even though JT is the only one of us that has to eat gluten free because he is the only one with Celiac disease, we are a gluten free household. We always say we're all for one and one for all. It works for us, not for every Celiac family.  

Just because it works for us, doesn't mean we don't miss gluten-filled foods. I make some of the kid favorites like chicken nuggets, pizza and corn dogs.  The homemade corn dogs look a little bit different than the packaged store-bought kind, but the kids have gotten used to it.  Sometimes when their friends come over they don't know what do with the homemade pizza or chicken nuggets, but they usually get over it and enjoy the meal.

My latest attempt at replicating popular kids foods was inspired by Pinterest.  I made Gluten Free Pop Tarts.



I had some great helpers. What 3-year-old doesn't want to roll out dough?

For the recipes, I did a Pinterest mash up of a few different recipes and came up with this:

Ingredients for the pop tart pastry:

2 1/2 cups gluten free flour
1 tsp of xanthan gum
1/4 tsp salt
8 tbs of butter or margarine (melted)
1 tsp pure vanilla extract
1/2 cup of milk

Ingredients and Instructions for the cinnamon/sugar filling:
1/2 cup of brown sugar
1 1/2 tsp of cinnamon
2 tbs of butter or margarine (melted)
Mix together in a small bowl and set aside.

Instructions:
  • Preheat oven to 350 degrees
  • In a large bowl, mix the flour, xanthan gum, salt and sugar.  Add melted butter, vanilla and milk and mix. 
  • Turn the dough until it holds together well.  Start kneading!
  • Spread gf flour onto a cutting board or clean surface and start rolling.
  • Roll the dough very flat and very thin (I wish I would've made mine even thinner than pictured below).
  • Then cut into rectangles which will soon be your pop tart.
  • Spread melted butter onto the dough and sprinkle the cinnamon/sugar mixture onto one side of the dough.
  • Use the other side of the rectangle dough as a cover.
  • Fold the sides tightly, like very tightly so the filling doesn't seep through.
  • Put the almost pop tarts onto a baking sheet and bake for approximately 15 minutes.
  • Don't forget the glaze** and then serve when they've cooled off a bit.
**Glaze**
Mix powdered sugar, cinnamon and milk until a glaze/frosting forms.  Drizzle it onto hot pop tarts from the oven.




The pop tarts don't look exactly like the store bought kind.  In fact they kind of look like Frankenstein-type pop tarts.  But guess what? None of my kids cared, because they tasted so good.  

Yes, it took a little longer and was more expensive than a simple box of regular pop tarts, but I'll make them again.  It was fun to bake with the kids and try out new recipes. 

The GF pop tarts were a hit at the breakfast table.
JT gave the pop tarts one thumb up.  It would have been two, but he was too busy grabbing another pop tart.

Once again Pinterest inspired me to do something way out of my comfort zone, like bake and combine recipes and take kitchen risks.

    1. It sounds like a crazy ingredient doesn't it? I get mine in the gluten free baking section at Kroger. Let me know if you make these and if you like them! :)
